Serves 4-6 | Prep Time 20-30 minutes | Cook Time 20 minute bake time, 5 minutes under broiler

Why I Love This Recipe

This is a great recipe to use up leftover cornbread.

Ingredients You'll Need

1/2 recipe Cheesy Corny Cornbread (or use leftover cornbread)_
1 T. oil
1 onion, chopped
1 sweet pepper, chopped
2 cloves garlic, minced
1 t. chili powder
1 t. cumin
1 lb. grass fed ground beef
2 ears fresh corn (or use canned or frozen)
1 can black beans
1/2 c. enchilada sauce (see recipe)
1 c. shredded cheddar
1 c. shredded Monterey Jack
salt and pepper to taste


Make cornbread according to recipe in a large iron skillet. Let cool. Or grease and cover bottom of skillet with leftover cornbread. Meanwhile brown meat in skillet with onion, sweet pepper, and garlic. When meat is browned and veggies are tender, drain off fat. Stir in spices, salt and pepper, enchilada sauce, corn, and black beans. Poke entire surface of cornbread with a fork, then pour meat mixture over top. Top with cheeses. Cover with foil and bake in an oven preheated to 350 F until cheese is melty, about 20 minutes. Switch oven to broil, remove foil and broil for about 5 minutes, until cheese turns golden. Serve immediately.
