Why I Love This Recipe

My aunt made this for Christmas last year and I almost turned my nose up at it because I do NOT like beans, but I decided to be adventurous and I'm glad I did. I love it! You would never know that it was beans! I have to watch my carbs, so I substitute about a 1/2 cup of Splenda for the sugar. No one will ever know the difference.


Ingredients You'll Need

1 c. canola oil or olive oil
1/2 or 3/4 c. sugar
1/2 c. cider vinegar
Bring to a boil, stir a couple of times. Set aside to cool.
Chop 1 c. celery
Chop 1 Sm onion
jalapeno (to taste from jar)
Drain & rinse
Small or med jar pimentos (you won't miss them if you don't have them)
Can of black eyed peas
Can of black beans
Small can shoe peg corn
Mix together & let set overnight.
Drain before serving.
