Thai Chicken and Coconut

Ingredients You'll Need
3 cps chicken broth
2 2/3 coconut milk
2 small thai peppers or 2 jalapeno peppers (seeded and sliced)
3 TB fish sauce or soy sauce
1 teaspoon minced ginger
1/8 tsp salt
1 lb boneless, skinless chicken breasts, thinly sliced
2 TB fresh lime juice
Chopped cilantro (to garnish)
Directions
Bring stock and milk to a boil.
Reduce the heat and sitr in peppers, fish sauce, ginger, and salt.
Simmer 10 minutes.
Stir in chicken and lim juice.
Simmer for about 5 minutes, until chicken is cooked.
Garnish with cilantro.
I cut the heat by serving over couscous. Whatever makes ya smile.
