Directions
In a large bowl, whisk together the flour, ginger, baking soda, cinnamon, cloves, and salt. Set aside.
In a stand mixer fitted with the paddle attachment, beat the softened butter and brown sugar on medium speed until light and fluffy, about 2-3 minutes. Beat in the egg and molasses until well combined.
Gradually add the dry ingredients to the wet ingredients and mix on low speed until just combined, being careful not to overmix.
Divide the dough into two equal portions and shape each into a disk. Wrap in plastic wrap and refrigerate for at least 1 hour or up to 3 days.
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats.
Place the remaining 1/2 cup of granulated sugar in a shallow bowl.
Working with one portion of dough at a time, roll the dough 1/4-inch thick on a lightly floured surface. Using a turkey-shaped cookie cutter, cut out shapes and place them 1 inch apart on the prepared baking sheets.
Gently brush the tops of the cookies with water or milk, then dip the tops into the granulated sugar to coat.
Bake for 8-10 minutes, or until the edges are set and the centers are still slightly soft. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Store in an airtight container at room temperature for up to 1 week.
