Thanksgiving Turkey Gravy with Giblets

Perfect Turkey Gravy

Ingredients You'll Need

4 TBS/1/2 cup/3/4 cups fat from cooking the turkey
4 TBS/1/2 cup/3/4 cups flour
(equal amounts of fat and flour)
2 cups/4 cups/ 6 cups broth or milk
Cooked turkey giblets if you want


Boil giblets (if using) in water with salt, 3 peppercorns, 3 cloves of garlic, 1 bay leaf, minced onion, celery, and carrot. Boil for 2 hours until tender.

When the turkey is done, pour the drippings from the roasting pan into a bowl, leaving all of the brown bits in the pan.
Let the fat rise to the top, and skim off.

Measure the fat needed and put it back into the roasting pan.

Blend in the flour and cook over moderate heat, stiring until brown and bubbly.

Gradually add the broth or milk and stir until smooth and thickened.

Season with salt and pepper.

If you are using the giblets, add them at the end.
