The Chicken You Make When the Spinach is About to Go Bad
Why I Love This Recipe
I often cook with whatever's on hand in the kitchen and rarely have the foresight to properly shop for ingredients at the grocery store (unless of course I'm inspired to make something specific like melt-in-your-mouth macadamia nut cookies, ahem).
So I noticed that the spinach I bought was on it's last leg and figured I better make something fast because I really, really hate to waste food. I got inspired by a Allrecipes.com recipe of a spinach stuffed chicken breast.
Ingredients You'll Need
4 chicken breasts, seasoned
4-6 turkey bacon strips
spinach leaves (half a bag or a little less)
1/4 cup Ricotta cheese
About a two handfuls of shredded cheese (or 2 slices of cheddar, diced)
1/4 cup of Mushrooms
Microwave the spinach leaves for 3 minutes or until they're wilted and pathetic looking.
Mix in ricotta cheese and the cheddar.
Put the mixture on top of each chicken breast then add mushrooms. Wrap up in bacon (secure with toothpicks if you want).
Place in a shallow baking dish.
Bake for 35 minutes on 375 F.
Broil on low for 5-10 minutes to crispify the bacon.
