The Ultimate Beet Sandwich

Why I Love This Recipe
FEATURING: Parsley or cilantro (optional), kohlrabi (or radishes or white turnips), carrots, beets, kale (swiss chard or beet greens also work), arugula (or lettuce), and cucumber (optional).
Ok, there are so many variations of this sandwich possible. Here is one I adapt based on what I have - I leave out the items that are optional when I don't have them handy!
Ingredients You'll Need
two slices seeded whole grain bread
1/4 thinly sliced avocado
1/2 teaspoons toasted sesame seeds
2-3 tablespoons hummus
5 sprigs Italian parsley or cilantro (optional)
1 kohlrabi bulb (or 2 radishes or white turnips), thinly grated (optional)
1/8 cup grated carrots
1/8 cup grated beets (or 1 beet, roasted and cut in thin slices)
1/2 kale leave, chopped in 1/4 in ribbons (or lettuce or any other greens- swiss chard, beet greens)
A few leaves of lettuce or arugula
4 slices cucumber (optional)
salt & pepper to taste
Directions
Toast/grill bread until lightly browned. Mash avocado into one side of toast and top with sesame seeds. Layer half the hummus on top of avocado and spread the remaining hummus on the other slice of toast. On the side with avocado and hummus, lay down the parsley, kohlrabi (or radishes), carrots, beets, kale, arugula, and finish with the cucumber slices. Season with salt & pepper. Top with the other piece of toast and cut. Serve immediately.
