Why I Love This Recipe


Ingredients You'll Need

Trader Joe's Toasted Coconut Pancake Mix (whichever serving size you prefer)
Water (follow directions on box for amount)
1/4 cup of frozen berries per 2 waffles (I had a mixed bag of blueberries, strawberries, raspberries, and blackberries)
1 tbsp of melted coconut oil per 2 waffles
1 teaspoon of vanilla per 2 waffles


Directions

Preheat the waffle maker and spray with nonstick cooking spray.


Defrost the frozen berries for about 30 second in the microwave - should be somewhat liquidy. Pour into a medium bowl with the rest of the ingredients, and stir. Once waffle iron is hot and ready, pour the batter in, and wait to check for at least 5 minutes.


Serve with buttery spread and warm maple syrup, even more berries, or some plain nonfat greek yogurt for a healthy, tart added flavor!
