Why I Love This Recipe

This is a wonderful crunchy appetizer. They are quick to make.

Sorry, I didn't take a picture the last time I made them. I am making for a Super Bowl party and will take picture.

Ingredients You'll Need

1 package (16 ounce) refrigerated cheese tortellini, thawed if frozen
2 large eggs
1/2 cup water
1 1/2 cups Italian Style Bread Crumbs
1/2 cup Parmesan cheese, finely grated
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/2 cup unsalted butter, melted and cooled
1 cup marinara sauce, homemade or prepared

Cook tortellini according to package directions. Drain, pat dry and set aside.

Preheat oven to 350 F.

Line a large baking sheet with parchment paper.

In a small bowl combine the eggs and water.

Whisk to blend.

Set aside.

In a medium bowl combine the bread crumbs, the cheese, the salt and the pepper.

Whisk to blend.

Dip tortellini, one-at-a-time, in the egg mixture, roll in bread crumbs to cover and transfer to the prepared baking sheet.

Brush each tortellini with melted butter.

Bake until tortellini are beginning to brown and crisp, turn tortellini, brush with melted butter and continue to bake, about 8 - 10 minutes per side.

Spear each tortellini with a decorative cocktail skewer and transfer to a large serving platter. Serve immediately with warmed sauce.
