Why I Love This Recipe

Veganized version of scrambled eggs! Full of protein and super yummy and filling!


Ingredients You'll Need

1 Package Extra Firm Tofu
½ Yellow Onion
1 clove Garlic
½ large Green Bell Pepper
5-10 Cherry Tomatoes
1 small bunch Cilantro
½ teaspoon ground Turmeric
½ teaspoon salt
¼ teaspoon ground Black Pepper
½ tablespoon Nutritional Yeast
Sprinkle of Smoked Paprika
1 Tablespoon Olive Oil (optional)


Directions

1. Drain and press the package of tofu.


2. While the tofu is pressing, chop the onion, cilantro, and bell pepper into small pieces. Mince the garlic and cut the cherry tomatoes into quarters.


3. Heat a skillet up to medium heat and add in the oil (or alternately water), onions, garlic and bell pepper.


4. Let the veggies simmer for a few minutes.


5. Crumble the tofu into small chunks and add it into the skillet. Cook for a 5 minutes.


6. Add in the spices and mix.


7. Take the mixture off the heat and add in the tomatoes and cilantro.


8. Serve and enjoy!
