Tofu Scramble

"Country Style Tofu Scramble"

This is a quick easy dish first of all. If you dont like your "eggs scrambled hard" try mixing the nutritional yeast and dry seasonings with some almond milk to make a "cheez sauce" and add it to the tofu mixture. Also try adding fresh spinach to it, or even garnish it with fresh sliced avocado with seasoned tomatoes on the side.
Ingredients You'll Need
Tofu Scramble:
14oz package Firm Tofu, drained
1 Tbsp Vegan Butter
1 Tsp Cooking oil
1/3 cup Portabella Shrooms, diced
1/3 Cup Onions, chopped
1/3 Cup Red Peppers, chopped
3 Garlic Cloves, minced
5 Tbsp Nutritional Yeast
2 Tsp Italian Seasoning
Pinch of paprika
Salt and Pepper to taste
Directions
Heat up a medium sized skillet on medium high heat.
Add the vegan butter and cooking oil to the pan
Once the foam settles, add the garlic and tofu, crumble the tofu in the pan using a wooden spoon to break the brick down. Stir and cook on one side for a couple minutes
Next add all the dry seasonings (enough to cover the top layer) , and add the peppers, onions, and shrooms. Mix the scramble together well, and let it cook on one side for another 5 minutes.
Stir the mixuture and keep cooking until the tofu scramble turns a dark yellow color and all the excess juice has evaporated (if you like your "eggs" scrambled soft , then dont cook the tofu as long) .
Remove pan from heat and place the tofu in a serving dish
