Tomato, Basil and Cheese Pasta

Why I Love This Recipe
Ingredients You'll Need
1/2 cup of white onion
6 oz of pancetta (Italian bacon)
2 cups of chopped tomatoes
1 small can of tomato sauce
1 clove of chopped garlic
1/8 cup of chopped basil
1 teaspoon of oregano
salt and pepper to taste
Pasta of your choice
1/2 cup of Romano cheese
~1/8 cup of Parmesan cheese
Directions
Serves 2-3 people
In a saucepan combine the onion and pancetta and cook on medium heat for 5-6 minutes. Add the tomatoes and tomato sauce. Let cook on medium for another 5-7 minutes. Add garlic, basil and oregano, and remaining spices. Turn heat to low and simmer for 15-20 minutes. Stir occasionally.
Cook the pasta of your choice - I like bowtie!
When pasta is done, turn heat of sauce. Pour about half the sauce in a bowl and mix in the 1/2 cup of Romano cheese. Add the drained pasta and stir so that the sauce coats the pasta a little bit. Serve and sprinkle the Parmesan on top.
I found a similar recipe in a cooking magazine and made a few changes. You can eat it on your own or you can serve smaller portions with a salad or bread!
