Tomato, Red Onion, Cilantro Salad

Ingredients You'll Need
Grilled/rotisserie chicken leftover (or steak)
Tomatoes - cut to size of choice
1/3 red onion - sliced thin
Cilantro - chopped or torn
Fresh squeezed lime juice to taste
2 tablespoons olive oil
Salt & Pepper to taste
Directions
Cut up protein of choice...set aside.
Wash and dry cilantro...set aside.
Wash 4 tomatoes and cut to preferred size.
Wash lime and roll on counter to loosen up the juices. Cut lime, squeeze juice and set aside.
Slice red onions, sprinkle salt on them and set aside.
In large bowl, add tomatoes, onions and handful of torn/chopped cilantro.
Add red onions and protein.
Pour freshly squeezed lime on salad and 2-3 tablespoons of olive oil.
Season with a little salt and pepper (remember, you've already added salt to the onions).
Toss and enjoy!!
