Why I Love This Recipe

A healthy chickpea salad is a great addition to any barbecue, pot luck or picnic. This salad is made with all fresh ingredients which, in itself, is a good start to being healthier. This salad offers an array of both flavors and textures that you might feel like you are missing out on while in braces. Treat yourself to something not only healthy, but easy and delicious!

Ingredients You'll Need

2 Cups Tomatoes (chopped)
2 Ripe Avocados (cubed)
1/4 Small Red Onion (Sliced)
1/4 Cup Cilantro (minced)
Juice of one Lime
2 Tbsp. EVOO (extra virgin olive oil)
Add On Options-
1 Small Cucumber (cubed)
1/2 Cup of Canned Chickpeas (drained)
1/2 Cup of Black Beans (drained)
1/2 Cup Crumbled Feta Cheese
1/2 Cup of Fresh Mozzarella Pearls


In a large salad bowl place tomatoes, avocado and cilantro

Drizzle with EVOO, lime juice, red pepper flakes, salt and pepper to taste.

Gently toss and serve immediately

Pairs Well With

Lean grilled protein or stand alone
