Tomato Basil Chicken & Pasta

Why I Love This Recipe
This is a recipe that I got from my sister with a few additions for more flavor. It is perfect for large groups because it is quick and easy to make!
Ingredients You'll Need
1 large onion
2 garlic cloves
5 tbsp dried basil
4-8 tbsp olive oil
2 lbs chicken breast or 4 cups of tofu
1 can tomato sauce (not paste!)
1 can small diced tomatos
1 cup dry white wine
1 cup water
1 teaspoon dried thyme
1 teaspoon dried marjoram
1 teaspoon dried oregano
1 teaspoon freshly ground black pepper
1/2 teaspoon crushed red pepper
1/2 can of quartered artichoke hearts (optional)
1 cup fresh mushrooms (optional)
1 cup of sliced black olives (optional)
2 cups of fresh spinach (optional)
Toasted pine nuts (garnish)
Fresh parmesan (garnish)
Fresh Basil (cut into small strips) (garnish)
Pasta noodles (penne absorbs the sauce well)
Directions
Cut chicken into small 1 inch pieces and cook in a skillet with 1 or 2 tbsps of olive oil.
In another skillet, saute garlic and onion in olive oil under tender, add wine and cook down another 5-10 minutes. Add tomato sauce, basil and water- cook for 5 minutes.
Add all other optional ingredients and cook for 10-20 minutes uncovered.
Add chicken (or leave chicken out for a vegetarian option. It is also really good with crumbled Tofu!)
Serve over cooked noodles and top with the three garnishes listed above.
