Tomato Basil Soup

Why I Love This Recipe
Tomato soup is comfort food! Any time it's cold outside, or not, is a good time for comfort food.

Ingredients You'll Need
• 4 Cans of Petite Diced Tomato
• 1 Carton of Tomato Sauce ( 1.5 oz )
• 1 Carton of Whipping Cream ( Pint )
• 3 Tablespoons of Litehouse Freeze-dried Basil or Fresh if you have it
• 1 Tablespoon sugar
• 1 Teaspoon Onion Powder
• Salt and Pepper to taste
Directions
In a pan add your cans of Petite Diced Tomato, carton of Tomato sauce, sugar and onion powder, salt and pepper, bring to a boil then turn down to a simmer for 30 minutes, then add in your Basil. Turn off heat you will then need to add your Whipping Cream.
VERY IMPORTANT at this point you will need to temper the cream to the hot tomato. To temper a sauce, separate some of the warm sauce into a small bowl. Slowly whisk the dairy into the warm sauce until it’s completely blended. Next, stir the combine dairy and sauce into the main batch of sauce, and warm until its ready to serve, do not bring to a boil at this point because you can accidentally curdle it.)
Serve with croutons, crackers, rustic bread or even Grilled Cheese sandwiches, enjoy!
