Tomato Breakfast Pudding

Why I Love This Recipe
It has a wonderful taste, the balsamic vinegar just adds boldness and sharpness while slightly sweet at the same time almost as if it had a little honey in it. Less bread and brown sugar would greatly improve not only the texture bit would allow more of the tomato taste to come through. (perhaps 1 cup less to start with) The baking time could also be reduced to 30 minutes
Ingredients You'll Need
4 cups of bread Cubes
1/2 cup melted butter
1/4 cup balsamic vinegar
3 Tbs brown sugar( used less and would decrease again)
1/4 cup red wine
1/3 cup grated cheese( used Cheddar)
1 can of stewed tomatoes( used Italian style)
Directions
Spray a large baking dish with non stick spray( used a deep dish pie plate) Add the bread cubes. Mix together the butter, vinegar, brown sugar and red wine and pour over the bread cubes to soak. Sprinkle with the grated cheese. Add the stewed tomatoes juice included and gently likf up the bread cubes to allow the tomatoes to sink in a bit. Cover and bake at 375 for 45 minutes covered.
