Ingredients You'll Need

4 cups fresh ripe tomatoes, chopped
1 tablespoon olive oil
1 medium yellow onion, diced
3 cloves garlic, minced
1 teaspoon smoked paprika
1/2 teaspoon ground cumin
2 cups vegetable broth
1/2 cup heavy cream
Salt and pepper to taste
1/4 cup crème fraîche
1 tablespoon chopped fresh basil
1 tablespoon chopped fresh chives


Directions

In a large pot, heat olive oil over medium heat. Add the onion and sauté until translucent, about 5 minutes.
Add the garlic, smoked paprika, and cumin to the pot and stir for 1 minute until the spices are aromatic.
Stir in the chopped tomatoes and cook for 10 minutes, stirring occasionally, until they begin to break down.
Pour in the vegetable broth and bring to a boil. Reduce heat to low and simmer for 30 minutes.
Using an immersion blender, blend the soup in the pot until smooth. Alternatively, blend in batches using a countertop blender.
Stir in the heavy cream and season with salt and pepper to taste. Simmer for another 5 minutes.
To make the herb crème fraîche, mix the crème fraîche, fresh basil, and chives in a small bowl.
Serve the soup hot, garnished with a dollop of the herb crème fraîche.
Optional: Top with additional fresh herbs or croutons for added texture.
