Ingredients You'll Need


· 1 pound dried red kidney beans rinsed
· 1 pound smoked sausage thinly sliced (andouille or smoked)
· 1 ham hock
· 1 green bell pepper chopped
· 1 medium onion chopped
· 2 garlic cloves minced
· Season All (to taste)
· Tsp Black pepper
· 3-4 Bay leaves
· 7 cups water
· 4 cups uncooked long grain rice
· Fresh or dried parsley, for garnish


Add red kidney beans, smoked sausage, ham hock, bell pepper, onion, garlic, Bay leaves, black pepper, Season All, and water to a 6-quart slow cooker. If you like it spicy, you can add some red pepper at this point. Set on high setting and cook for 6 hours. If you don’t eat pork, you can use turkey sausage and turkey tails as your meat in this dish. I have done that, but then added Goya Ham Seasoning and it’s delish as well.

Cook rice according to package directions. I cook boil in the bag rice. (don’t judge me!)

Serve red beans over top of the cooked rice. Top with parsley to make it look pretty. I serve this with fried/baked chicken or pork chops and Jiffy Cornbread
