Tortellini Broccoli Salad served cold
Ingredients You'll Need
1 – 20 ounce package of refrigerated cheese tortellini
3-4 cups broccoli florets, cut to bite size pieces
1 container cherry or grape tomatoes; cut in half
Cooked bacon, chopped (optional)
Shredded cheese (optional)
1/3 cup chopped onion (optional)
1 cup mayonnaise
¼ - ½ cup white sugar (sweeten to taste)
1 ½ Tablespoon apple cider vinegar
¼ teaspoon salt
¼ teaspoon pepper
Cook tortellini according to package directions, drain and cool.
In a mixing bowl, combine dressing ingredients. Add broccoli florets, cooled tortellini, tomatoes and any optional ingredients; toss to coat. Let chill at least one hour before serving.
Note: I will sometimes make an additional batch of the dressing (depending on how many optional/extra things I include) and mix in some of it before serving.
