Why I Love This Recipe
This was originally a recipe from Cooking for 2 for "tamale pie" that I modified almost completely, so I am going to post it with my ingredients. Original was beef and flour tortillas with olives. I sustituted the turkey, mexi cheese, jalapenos, and whole wheat tortillas. This would also be good with some pinto beans mixed in, too.
Ingredients You'll Need
2/3 pound lean ground turkey
6 tablespoons chopped onion
1 1/2 cups stewed tomatoes, chopped
1/4 teaspoon garlic powder
1/4 teaspoon chili powder
Dash salt and pepper
4 whole wheat tortillas (6 inches)
1 1/3 cup shredded low fat mexican cheese blend
4 tablespoons sliced pickled jalapenos.
Directions
In a small skillet, cook turkey and onion over medium heat until meat is no longer pink; drain. Stir in the tomatoes, garlic powder, chili powder, salt and pepper.
Remove from the heat.
Place one tortilla in each of two 3-cup round baking dishes coated with nonstick cooking spray. (I have some Fiesta quart bowls that work perfectly for this!)
Top with half of the meat mixture and cheese; repeat layers.
Sprinkle with jalapenos.
Bake, uncovered, at 350° for 15-20 minutes or until heated through.
