My mom makes the best tortillas! Excellent hot, slathered with butter and a pinch of salt sprinkled on top!
Ingredients You'll Need
3 cups all purpose flour
1 1/2 teaspoon salt
1 1/2 teaspoon baking powder
1/3 cup oil (Traditional ingredient is lard)
1 cup HOT water ( you may need slightly more to create soft dough)
In a large bowl combine flour, salt and baking soda. Toss ingredients together with your hands. Pour oil into dry ingredients and crumble between fingers until its completely incorporated.
Turn on water and get water as hot as you can handle without burning yourself. Pour water into dry flour mixture. Dough will be slightly sticky but keep kneading it without adding extra flour. (Tip: Wash and coat your hands with oil if the dough continues to stick to your hands and keep kneading)
The softer your dough, the more pliable your tortillas will be. If you have a dry dough you'll end up with tortillas that are hard like crackers. Knead for about 5 minutes. Cover dough with a clean dish towel. Set aside for 20 minutes.
Pull dough and make small balls around the size of golf balls. you'll get 12 balls of dough. Cover with towel. Roll out each ball of dough and place on a hot cast iron griddle ( medium heat) for 1 minute on each side. (Look for brown specks and tiny bubbles on each side before removing from heat.)
