Tuna-Rice-Olive-Pumpkin Pie

I think the is actually from zijja Tessie - translates to aunt Tessie or better 'Aunty Tessie' in Malenglish .. MalteseEnglish!
Tastes awesome in summer (eaten at room temperature or even cold when it's 40 degrees +) but also in winter (definitely warm)
Ingredients You'll Need
500g pumpkin
2 large tuna cans
2 onions
75g anchovy (optional - I omit this as it might get too fishy)
250g green/black olives
chopped mint leaves
1 cup cooked rice
some olive oil
salt and pepper

FILLING INSTRUCTIONS
Heat the olive oil and fry the onions for a while.
Add the diced pumkin, reduce heat and cook for 10 minutes while stirring.
Combine the rest of the ingredients: tuna, anchovy (if using), olives, mint leaves, cooked rice, salt and pepper.
Cook for another 5 minutes and finally remove from heat and let cool completely (if possible)

Prepare the Mami' Dough in a baking tray and fill it with the Pumpkin-Tuna-Rice mixture.
Bake for 45minutes - 160 degrees Celcius
