Turkey, Corn and Potato Soup

Ingredients You'll Need
1/2 Cup chopped onion
1 tsp. butter
5 cups turkey broth or chicken bouillon
1 1/2 lbs. potatoes, peeled and cut into 1-inch cubes
2 Cups cooked turkey, cut into 1/2-inch cubes
1/4 tsp. salt
1 1/2 Cups corn
Directions
In 5-quart saucepan over
medium-high heat, cook
and stir onion in butter
5 minutes or until onion
is soft. Add broth,
potatoes, turkey and salt;
bring to a boil. Reduce
heat to low, cover and
simmer 20 - 25 minutes
or until potatoes are
tender. Stir in
corn. Increase heat to
medium and cook 5 - 6
minutes.
To serve, spoon 1 cup
soup in bowl and garnish
with cilantro, if desired.
Yield: 8 servings
