Turkey Chili

This is a yummy chili recipe that’s full of veggies!
Ingredients You'll Need
1 Pound Ground Turkey
1 medium onion chopped
1 yellow bell pepper chopped
½ package of baby Bella mushrooms chopped
2 celery stalks chopped
1 teaspoon salt
½ teaspoon thyme
¼ teaspoon black pepper
1 tablespoon chili powder
½ teaspoon cumin
½ teaspoon basil
1 - 15 ounce can of red kidney or black beans
1 – 15 ounce can diced tomato
1 – 15 ounce can tomato sauce
2 bay leaves
1 or 2 tablespoons of brown sugar to reduce acid (optional)
Directions
Sauté vegetables with a little bit of olive oil in the bottom of a large stock pot.
Brown turkey in separate skillet. Salt and pepper to taste.
Once vegetables are tender, add diced tomato and tomato sauce. Stir well. Add spices and beans. Stir well. Add brown sugar to taste if desired.
Drain ground turkey, if needed, and add to sauce mixture. Simmer over low heat for at least 30 minutes.
