Turkey Sausage & Tortellini Soup

Why I Love This Recipe
This soup tastes so rich and delicious, without a lot of effort. I started with an allrecipes.com recipe, reduced the proportions, and changed a few ingredients to suit our tastes. It is unbelievably tasty! I am working on clarifying the times. I do not really simmer for an hour -- this is quicker than that!
Ingredients You'll Need
2 spicy turkey sausages, casings removed
1/2 cup chopped onion
2 cloves garlic, minced
3 cans beef broth
1/2 cup red wine
1 28 oz. can crushed tomatoes (with juice)
1/2 cup thinly sliced carrots
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1 medium zucchini, sliced
4 ounces tortellini (cheese filled from Trader Joe worked perfectly)
1/4 cup fresh basil leaves (or to taste)
Freshly grated Parmesan cheese
Directions
In a heavy soup pot, brown sausage. Add onions and garlic; saute. Stir in beef broth, wine, tomatoes, carrots, dried herbs, and sausage. Bring to a boil. Reduce heat; simmer uncovered for 30 minutes. Stir in zucchini. Simmer covered for 5 minutes. Add tortellini; simmer for 15 more minutes. Add basil during the last 5 minutes. Sprinkle with Parmesan cheese on top of each serving.
