Why I Love This Recipe
The word 'tinga' originates from Mexican Pueblan cuisine, describing dishes prepared with a smoky tomato sauce containing chipotle peppers.
Ingredients You'll Need
2 cups cooked turkey, shredded
1 can (14.5 oz) diced tomatoes
2 tablespoons chipotle peppers in adobo, finely chopped
1 teaspoon ground cumin
1 teaspoon smoked paprika
1 small onion, minced
2 cloves garlic, minced
2 tablespoons olive oil
12 small tortillas (corn or flour)
1/2 cup sour cream
Juice of 1 lime
Salt and freshly ground pepper to taste
Fresh cilantro and slices of fresh lime for garnish
Directions
Heat olive oil in a large skillet over medium heat. Add minced onion and garlic, cooking until onions are soft, about 5 minutes.
Stir in chipotle peppers in adobo, diced tomatoes, cumin, and smoked paprika. Cook for 3-4 minutes, until the flavors meld.
Add shredded turkey to the skillet, stirring to coat the turkey in the sauce. Simmer over low heat for 10 minutes, stirring occasionally, until the mixture is saucy and heated through.
Meanwhile, prepare the lime crema by mixing sour cream with lime juice in a small bowl. Season with a pinch of salt and pepper to taste.
Heat the tortillas (using a dry skillet or microwave).
Assemble the tacos by placing a generous amount of the turkey tinga mixture in each tortilla. Top with a dollop of lime crema and fresh cilantro.
Serve immediately with lime slices on the side.
