Why I Love This Recipe

This recipe evolved from one I came across in an old issue of Gourmet. I changed it up a bit, substituting turkey sausage for the pork sausage. Kids and adult alike enjoy it.

Ingredients You'll Need

1 package of hot or sweet Italian turkey sausage
2 tb. olive oil
1 red bell pepper, chopped
1 yellow bell pepper, chopped
6 cloves of garlic, minced
28 oz. can whole tomatoes
1 cup of tomato sauce
1/2 cup of red wine
1 package of Barilla whole grain pasta (ziti or whatever shape you prefer)

Remove sausage casing, crumble it into a heated skillet with olive oil. Break up sausage links with wooden spoon and brown over med/low heat. Remove sausage from pan and place on paper towels. Drain excess oil. Add peppers to pan and saute until softened. Add garlic and saute but do not allow to brown. Blend whole tomatoes until smooth and add to vegetable mixture, along with the tomato sauce and the red wine. Return sausage to sauce and season to taste with salt and pepper. Cook over low/med heat for 25 minutes. Cook pasta according to package directions, drain and toss with sausage sauce. Garnish with fresh parsely and parmesan cheese.
