Twice-Baked Potato Casserole

Why I Love This Recipe
I came across this recipe and tweaked it a lil to make it something my whole family would like. We just love traditional twice baked potatoes but I don't always have the time to make those. Hope you enjoy this recipe as much as we all do!
Cooks Note:
This was definitely tasty! I used frozen bacon and cut it into small pieces then fried it… made it easy!
Ingredients You'll Need
6 medium unpeeled potatoes already baked
1/4 tsp salt
1/4 tsp pepper
1 lb sliced bacon, cooked and crumbled
3 cups (24 oz) sour cream
2 cups (8 oz) shredded mozzarella cheese
2 cups (8 oz) shredded cheddar cheese
2 green onions chopped
Directions
Cut baked potatoes into 1-inch cubes. Place half in a greased 13 x 9x 2 baking dish. Sprinkle with half the salt, pepper, and bacon. Top with half the sour cream and cheeses. Repeat layers. Bake uncovered in a 350 degrees oven for 20 minutes or until cheese is melted. Sprinkle with onions. Yields 6-8 servings
