Twice baked Potatoes

These potatoes are great for holiday meals because they are delicious and can be made ahead.
Ingredients You'll Need
4-6 large baking potatoes, well scrubbed and pricked on both sides
olive oil
6 T. butter or to taste
1 c. sour cream or to taste
1 c. sharp cheddar or to taste
salt and pepper to taste
4-6 slices of bacon, cooked and diced
Directions
Bake potatoes at 425 F until tender, about 45-60 minutes. Using oven mitts, cut potatoes in half and scoop out interiors leaving 1/4" potato in shell into a large bowl. Add butter, sour cream, and cheese and combine, mashing potatoes, but leaving chunks. Top with bacon bits. Refrigerate potatoes (or freeze for future meals), until ready to cook. Potatoes can go in with roast for about 30 minutes at 425 F or until lightly browned and hot.
