Tzatziki Shrimp Cucumber Rounds

This appetizer is light, healthy, and delicious with the freshness of the cucumber, sweetness of the shrimp, and saltiness of the bacon. My friends ask for this each time we have a gathering.

Ingredients You'll Need
1/4 c reduced-fat plain yogurt
2 tbsp finely-chopped, peeled cucumber
1/8 tsp garlic powder
1/8 tsp dill
6 bacon strips
24 uncooked, peeled and de-veined medium-size shrimp
1-1/2 tbsp olive oil
2 medium cucumbers cut into 1/4" slices - 24 total
extra dill or fresh parsley (optional for garnish)
Directions
In small bowl, combine yogurt, chopped cucumber, garlic powder, and dill. Set aside.
Cut each bacon strip in half width-wise and then again length-wise. Wrap a piece of bacon around each shrimp, securing with a toothpick.
In large, non-stick skillet heat oil over medium heat. Cook shrimp in batches for 3-4 minutes each side until the bacon is crisp.
Spoon a rounded 1/2 tsp yogurt mixture onto each cucumber slice. Top with 1 shrimp. Garnish with extra dill or fresh parsley if desired.
