VEGETABLE SOUP SCOTT AND MICHELLE'S STYLE

Why I Love This Recipe
A delicious recipe my husband and I came up w/ while trying to imitate a soup a friend of ours made for us when we were sick a few yrs ago :)
Ingredients You'll Need
1- 1 1/2 lb pork (loin, boneless country style ribs, boneless pork chops or pork steaks cut off excess fat) cut in bite size pieces
2-3 heaping TBS crushed pineapple and juice
2 tsp light brown sugar
1 lb ground beef
2 yellow cooking onions (1 diced or rough chopped for meat mix and 1 cut in 1/2 for broth)
3-4 beef bullion cubes
OPT: 1 heaping tsp ketchup
1- 2 stalks of celery diced
OPT: a lil garlic powder
1/2 tsp oregano or mixed italian seasoning (crushed between fingers when adding to pot)
32 oz swanson beef stock
salt and pepper if needed
OPT: 1/2 - 1 bayleaf (nope not me I don't add this but others like it)
OPT: Marrow bone
4 large baking potatoes peeled and cubed
bag of baby carrots or 1 can of carrots (I prefer the baby carrots)
OPT: 1 cup frozen green beans and/ or 1 cup frozen baby peas and/ or 1/2 cup frozen corn and/ or 1/2 cup frozen lima beans
3- 4 cans o 1-2 family size Campbell's Condensed Vegetable Beef Soup
Directions
Get out large soup pot and set aside
In a frying pan add bite size chunks of pork, pineapple, pineapple juice from crushed pineapple can, brown sugar and about a TBS of water cook and then add to soup pot when done
In frying pan add ground beef and some water cook till grey color strain (always strain before adding onions or other veggies or seasoning so you don't pour the flavors out!) and put back in pan. Add onions cook 'til soft add bullion and 1 TBS water and cook 'til bullion is dissolved. Add Opt: Ketchup, Opt: garlic powder (very little if using it) stir and add to soup pot
In soup pot start broth: Swansons beef stock, celery, oregano or Italian mixed seasoning (crushed between fingers while adding to pot) If using Opt: Marrow bone or Opt: bay leaf add it here. Bring to a boil then turn dwn to simmer and simmer for awhile then taste and see if it needs more bullion, salt, pepper or oregano or Italian seasoning
Add potatoes and baby carrots (if adding a can of carrots add it when adding campbells veg. beef soup)
Cook about 10 mins add Opt: frozen veggies if adding any and cook 'til done (don't over cook potatoes or they'll turn to mush)
when heated through add Campbells vegetable beef soup heat and eat
