Ingredients You'll Need
2 tablespoons coconut oil
1 onion, diced
2 cloves garlic, minced
1 tablespoon curry powder
1 cup coconut milk
1 can chickpeas, drained and rinsed
2 cups mixed vegetables (carrots, peas, bell peppers)
Salt (to taste)
Fresh cilantro (for garnish)
Directions
Heat coconut oil and sauté onion and garlic until soft.
Add curry powder and cook for 1 minute.
Stir in coconut milk, chickpeas, and vegetables. Season with salt.
Simmer for 20 minutes until vegetables are tender.
Garnish with cilantro and serve.
