Vegetable Lo Mein

"Homemade Vegetable Lo Mein"

Have you ever wanted the Lo Mein from a restaurant but haven't really had the money to go? This is a very quick, and easy, recipe to use so that you can fix that Chinese food craving you've been having!
Ingredients You'll Need
1/4 Cup Vegetable broth
1/4 Cup Soy Sauce
2 TBS Rice wine vinegar
1 TSP sesame oil (2 TSP if you want it very spicy)
1/4 TSP Red Pepper Flakes (1 TSP if you want it very spicy)
1 TSP Sugar
2 TBS Oil
1TBS Soy Sauce
8oz Linguine Noodles
8oz Various vegetables of choice
2 TSP Garlic Minced
Vegetables that I used:
1/4 cup Red Onion
1 stalk of green onion
1 carrot, small cut in thin slices length ways
1 red pepper
1/4 cup celery stalk,
1/6 cup of celery leaf
Directions
Cut up the vegetables that you wish to use in this dish, you don't want them large, I would go for medium sized.
Using a saute pan, heat the 2TBS of oil and add in the garlic and vegetables that you wish to have in the dish. Saute until the noodles are just starting to soften.
Once you have the Vegetables on to saute put in the noodles to cook in a bigger pot, ONLY do the noodles al dente. The reason that you want the noodles Al Dente is because they will finish cooking once you have added the sauce and veggies to them.
Once the Vegetables have begun to soften add in the vegetable broth, soy sauce, rice wine vinegar, sesame oil, red pepper flakes, and sugar. Let it come to a boil and then turn it down to simmer. Stir regularly. Turn them to just warm once the noodles are soft.
Drain the noodles when they are Al Dente, add the sauce, stir, add the last TBS of toy sauce. I added an extra 2 TBS because one wasn't enough.
Let them sit there, without the stove on, soaking together for about five minutes and then serve and enjoy!
