Vegetable Quinoa Taco
Why I Love This Recipe
A fresh and light variation of the decadent taco.
Ingredients You'll Need
1 cup uncooked quinoa
1/2 yellow onion
1 red bell pepper
1/2 cup shredded cheddar cheese
1/2 cup lettuce
1 large avocado
2 Tablespoons olive oil
1/2 teaspoon garlic powder
Salt to taste
Pepper to taste
2 Tablespoons salsa
Cook the quinoa according to the package instructions.
Cut the onion and bell pepper into strips. Shred the cheese and lettuce, then cut the avocado into small chunks.
Heat olive oil in a small pan on medium heat.
Add the onion to the pan and cook until translucent, about 2 minutes.
Add the bell pepper and cook for another 2 minutes.
Stir in the garlic powder, salt, and pepper. Remove from heat.
Once the quinoa is ready, heat up the tortillas and assemble the ingredients into a taco.
