Why I Love This Recipe
I founded this recipe one night when I was starving and needed to eat immediately! Being a Vegetarian and the rest of my family is NOT, I decided to "fool them". I did! This is how: Its so simple!
Ingredients You'll Need
1 Frozen Bag Cauliflower
1 Frozen Bag Brocolli Florets
1 Bag Boca Burger Crumbles
1/2 cup catsup (more or less)
1 tsp mustard
1 Jar Nacho Cheese Sauce
5-10 Green Olives
Cook Vegies as directed in the microwave in a Pyrex or similar dish ~ 2 full bags of veggies take 14 minutes to cook. Half the recipe its only 7 minutes.
In the meantime, get ready 1 package Boca or Morningstar crumbles, whichever brand you prefer. This looks and tastes like Ground Beef (they will never know)
When the Veggies are Cooked, remove from microwave and drain away excess water ~ be careful ~ its steaming hot.
Now - Cook the Crumbles in another Pyrex - I use half the bag but you can use as much or little as you prefer. Cook plain/as is, for 2 minutes, until not frozen anymore.
Next, add Ketsup to the crumbles to Cover. You know how much Catsup you like! More or less is fine! Add mustard as well if you choose to. My family "hates" mustard but they dont know its in there! HA!
Cook the crumbles now stirred with the ketsup another 2-3 minutes to finish cooking but dont let them burn. Remove from microwave.
Now that your crumbles are cooked with the ketsup/mustard combo - and your veggies are also cooked. Mix them together.
Stir or I should say Fold gently together, now cook again for 2 to 3 minutes to set the flavors together. You can add a dollop of cheese at this time if you wish.
Your finished EXCEPT now you may add MORE cheese ~ I use the Cheese Sauce in the Jar for Nachos - as much or as little as you choose. (I like lots). Sometimes I use Fat Free Cheese Slices they work as well for a slight different taste! You may also use another favorite cheese or NONE ! (unheard of!)
Garnish with several Green Olives per serving, they will give it just the right tang! (my family dosent like them either, Yeah right!)
Serve as it is if you are dieting ~ OR wonderful over Rice - Stuffed into Pita Pockets - Or Over Pasta.....if you are dieting plain is fine ~ I lost over 70 pounds eatting this as my main protein/veggie staple several meals a week!
Almost 0 fat grams except for what is in the Jar cheese which is between 2.5 - 4 grams per serving depending on which brand you use and the few fat grams that are in the Boca Crumbles which are Vegetable fat and the Best kind of Protein!!
