Why I Love This Recipe
This veggie club sandwich is made with meat substitutes easily found in stores. The delicious potato wedges are a healthy alternative to french fries.
Ingredients You'll Need
Recipe for Vegetarian Club Sandwich
Ingredients for 4 people
You will need at least 12 frill picks or cocktail swords to secure the club sandwiches, a large grill or non-stick frying pan, a toaster or toaster oven.
12 slices white bread
3/4 cup good mayonnaise
8-10 veggie bacon strips
8 veggie chicken patties
1 tablespoon sun-dried tomato pesto
2 teaspoons Dijon mustard
freshly-ground black pepper
2 large tomatoes, sliced thinly
4 ounces thinly sliced Camembert or Brie cheese
a bag washed arugula leaves (use amount desired and the rest can be stored in the refrigerator for a few days)
1 clove garlic, peeled
Recipe for Herbed Potato Wedges
The potato wedges require more cooking time so you should prepare them before the club sandwich. You can then prepare the various sandwich ingredients while the potatoes are in the oven.
Ingredients for 4 people
6 large potatoes (that's 1/12 per person)
freshly ground black pepper
freshly ground Mediterranean sea salt
about 2 tablespoons (or more if you wish) dried herbs: oregano, basil, parsley, rosemary, marjoram, thyme
1 teaspoon garlic powder
1 teaspoon onion powder
good olive oil
Prepare a grill or frying pan by brushing a bit of the olive oil and grill veggie chicken patties and veggie bacon strips in a single layer. If grill or pan are not big enough cook a few patties and strips at a time. For cooking times follow the manufacturer's instructions on the box.
Toast the bread slices in a toaster.
Put the sandwich together: arrange 4 toasted bread slices in a row so you can work better: spread about 1 tablespoon of the mayonnaise mixture (or more if you wish) on each slice, then top with 3 arugula leaves per slice, add 1 slice of tomato per slice.
Now you are ready to add the veggie chicken pattie, on top of this add a cheese slice (make sure the pattie is hot so the cheese will melt), then add a couple of veggie bacon strips (which you will have to cut to fit the size of the bread slices).
Top this first layer with a second toasted bread slice, layer the ingredients as done above and finish off with the third slice of bread.
Carefully hold the sandwiches by gently pressing down as you slice them into quarters with a serrated knife.
Secure each club sandwich quarter with a frill pick or cocktail sword. Serve hot.
Directions for Herbed Potato Wedges
Pre-heat oven to 200 C or 400 F.
Wash the potatoes and cut into wedges without removing the skins, pat dry.
Put wedges in a bowl and add olive oil- toss wedges so they are all coated with the oil.
In a bowl mix the dried herbs, the garlic powder, the onion powder and add a generous sprinkling of freshly ground black pepper and sea salt. Note that if garlic and onion powders are already salted you may need to add less or no salt to the herb mixture.
Add herb mixture to the the wedges and toss to coat well.
Transfer the herbed potato wedges in a baking pan and place in a hot oven for about 45 minutes or until wedges are golden. You can check if they are cooked by inserting a toothpick or a fork, potatoes should be soft.
Pairs Well With
Arrange the veggie club sandwich on a plate, sliced in quarters with frill picks securing each stack, arrange the herbed potato wedges on the side and serve hot.
