Serves 6 | Prep Time 10 minutes | Cook Time 20-25 minutes

Why I Love This Recipe

Great on mashed potatoes.

Ingredients You'll Need

7 cups good vegetable stock
1 cup white wine (or substitute more stock)
8 dried shiitake mushrooms
1/2 butter (or vegan substitute)
1/2 cup flour
2 TBS soy sauce
1/2 tsp marmite (if you want it)
salt and pepper


Combine stock and mushrooms in a saucepan.
Bring to a boil.
Take off of heat and let sit for 30 minutes.

In another sauce pan, melt the butter.
Add shallots if using, and cook for a couple of minutes until soft.
Add flour to make a roux.

Slowly add stock with muchrooms
Add soy sauce, salt and pepper to taste, and marmite if using.

Gently simmer for 20 minutes, reducing by half.
