Veggie Lettuce Wrap

If you have ever had a Thai Lettuce Wrap from a Bistro - that was my inspo for this recipe.
Ingredients You'll Need
Head of Lettuce for wraps
1/2 Bag of Broccoli Slaw - I purchased at Hy-Vee
1 cup Baby Bella Mushrooms - Chopped
1 cup Bell Peppers - Chopped
1 Zucchini Squash - Chopped
1 TBSP Minced Garlic
1 TBSP Minced Onion
2 TBSP Parsley
1/4 cup Liquid Aminos
Dash of Sea Salt
Feta Cheese- I use Vio Life Vegan Feta
In a bowl, mix together chopped veggies, garlic, onion, parsley, sea salt.
Preheat skillet on medium heat, add choice of oil and liquid aminos to pan. I use Avocado Oil.
Cook veggies in oil and aminos, cover with a lid and stir occasionally until cooked through. About 5-10 minutes.
Peel layers from head of lettuce and scoop veggies into the wrap, top with feta cheese.
