Veggie and cheese egg casserole

Ingredients You'll Need
1 c. buttermilk
1/2 c. onion, grated
1-1/2 c. shredded Monterey Jack cheese
1 c. cottage cheese
1 c. spinach, chopped
1 c. tomatoes, chopped
1/2 c. butter, melted
18 eggs, beaten
Directions
Mix all ingredients together; pour into a greased 13"x9" baking pan. Cover; refrigerate overnight. Bake at 350 degrees for 50 minutes to one hour. Serves 8 to 10
