"layered Lasagna with sautéed veggies "cheese" sauce, and fresh herbs"

Cheesy eggplant herb crusted lasagna

Comfort food that evolves with my lifestyle which includes Vegan meals.

Ingredients You'll Need

1 peeled and sliced eggplant
sliced mushrooms and red onion
fresh parsley
homemade cashew cheese sauce
spelt or chickpea breadcrumbs
6 oz raw cashews
aquafaba (chickpea juice)
1 tbspn fresh lemon juice
salt and pepper
1 -2 tbsp nutiva coconut garlic oil


soak cashews in water for 6-8 hours
add soaked cashews to processor
blend cashews with aquafaba, lemon
stop when sauce is thick and creamy

heat sauce and season to taste

Sautée onions, mushrooms, and eggplants with nutiva coconut garlic oil

Start one layer of veggies top with cheese and repeat

season, sprinkle with oil and parsley

top with breadcrumbs and bake !

crisp salad with Italian dressing
