Why I Love This Recipe

made this for my dad and all his hunting buddies. They LOVED it! I stirred in the rice and let it cook in the sauce and they ate it like a gumbo.

Ingredients You'll Need

1lb bulk hot sausage
1 lg onion-diced
1 medium red pepper-diced
2lbs venison steak-cut into cubes
2T olive oil
1 can crushed tomatoes
1 can beef broth
1/4 c tomato paste
1 T brown sugar
2 tsp chili powder
2 tsp ground cumin
1 tsp dried oregano
1/2 tsp red pper flakes
hot cooked rice


In a dutch oven cook the sausage, onion and red pepper over medium heat until no longer pink. Drain and set aside. In the same pan, brown venison in the oil. Drain and return to the pot. Add the remaining ingredients and the sausage mixture. Simmer, uncovered, for 1 1/2 hours our until venison is tender. Serve over rice.
