Serves 3 | Prep Time 10 minutes | Cook Time 110 minutes

Why I Love This Recipe

Vermicelli with custard is a delicious fusion of vermicelli (also known as Sewiyan) and fruit custard. This vermicelli cups can also be filled with Shrikhand, Rabdi or wide range of fruits that one likes.

Ingredients You'll Need

150 gms roasted vermicelli (Sewai)
2 tablespoon ghee
2-3 tablespoon condensed milk
1.5 cups milk
2 tablespoon custard powder
3 tablespoon sugar
Chopped fruits as per choice

Add 2 tablespoon ghee in pan and add the roasted vermicelli to it. Roast it for 5 mins. Add few drops of water to keep the vermicelli soft. Then add 2-3 tablespoons of condensed milk and mix it well.

While the mixture is being cooked, coat the steel or ceramic cups with transperant sheet so that the cups can be taken out easily later. Take the mixture out from the gas and try to mould it in the form of cups. Make sure you mould the mixture to cups when it is hot. Now refrigerate the moulds for half an hour.

Till the time the moulds are being refrigerated, we will make the custard. Add 1.5 cups of milk in a pan and let it come to boil. Add sugar to it and let it mix well. Take 3-4 tablespoons of boiling milk in a bowl and add custard powder to it. Mix it well so no lumps form. Now add this to the boiling milk and stir the milk continuously till we get thick consistency of custard. Once done, let the custard cool at room temperature.

Lets cut the desired fruits into pieces and keep it ready fou custard.

Now, lets take the vermicelli moulds out from refrigerator. We will start by our first cup. Pull the transperant film gently to remove the cup from the mould. We can see it comes out very clean. Now fill the cup with fruits we have chopped and put a layer of custard over it.
Garnish with more fruits and our vermicelli cup with custard is ready to serve.
