Ingredients You'll Need
barbecue chicken, purchased 1, meat only
carrot 1 peeled and cut into matchsticks
Lebanese cucumber 1 cut into matchsticks
green shallots 3 thinly sliced
red chilli 1 long, cut into thin slices
fresh coriander leaves 1 cup
baguette cut into 4, or 4 baguette rolls
nuoc cham sauce 2 tbs or sweet chilli sauce
Directions
1. Remove meat from chicken, Discard skin and bones. Shred meat and place into a large bowl. Add carrot, cucumber, shallots, chilli and coriander and toss until well combined.
2. Cut baguette pieces in half, down through the centre, taking care not to cut right through. Place chicken mixture into each roll and drizzle with nuoc cham or sweet chilli sauce. Serve.
Note: A purchased barbecue chicken will yield approximately 400g of meat.
Note: Nuoc cham sauce is used every day in Vietnamese food and is a blend of fresh chilli, fish sauce, carrot, garlic and vinegar. You can purchase ready made nuoc cham sauce from the Asian food section of the supermarket or from any Asian food store.
