WHITE CHOCOLATE RASPBERRY MOUSSE

Who doesn't like white chocolate and raspberries? An easy, but impressive dessert for a dinner party.
Ingredients You'll Need
10 package frozen (thawed) or fresh raspberries
2 T. sugar
2 T. Grand Marinier (or orange juice)
1 3/4 c. heavy whipping cream
6 oz. white chocolate, chopped
Directions
Beat 1 1/2 c. whipping cream in the bowl of a stand mixer until stiff peaks form, transfer to another bowl and set aside in fridge. Process raspberries in blender until smooth. Strain raspberries into a small bowl, discarding seeds. Add sugar and liqueur, stir until sugar is dissolved. Set aside. Put white chocolate into a small bowl, add 1/4 c. heavy cream and stir. Microwave chocolate for 1 minute at 50% power, stir, continue microwaving in 30 second intervals at 50% power as needed until melted and smooth. Transfer to
clean mixer bowl and start mixer on low speed. Add whipped cream 1/3 at a time until incorporated into chocolate. Layer chocolate and raspberry puree into pretty glasses, ending with chocolate. Chill 2 hours or overnight, top with fresh raspberry before serving if desired.
