Why I Love This Recipe

Wacky Cake is surprisingly one of the best cakes I've ever made! It has a wonderful texture and flavor. This is a very old recipe that's been around since my grandmother's time, but I only found it when my kids were little and it is just as easy as using a cake mix. It is a cake that became popular during the depression and war era when eggs and milk were scarce. You can make it in the same pan you mix it in. This was done by mixing all the dry ingredients and placing them directly into the pan and then make three holes to add oil or melted butter in one, vinegar in the second hole, and water in the third hole then mix it all together. You don't even need eggs! All the ingredients are basic staples and so Wacky Cake can be made anytime, and it's just so easy to do! Wacky Cake is a great recipe to use for a birthday cake.

Ingredients You'll Need

3 cups all-purpose flour
2 cups sugar
1 tsp salt
2 tsp baking soda
1/3 cups cocoa
2 cups water
3 Tbsp canola oil
2 Tbsp white vinegar
1 tsp Pure Vanilla Extract

Fudge Frosting
1 1/2 cups sugar
3 Tbsp cocoa
1/3 cups milk
1/3 cups butter
1 tsp Pure Vanilla Extract


Preheat oven to 350 degrees F. Lightly grease a 9x13 inch pan or baking dish.

Mix together flour, sugar, salt, baking soda, and cocoa into a large bowl.

In another bowl, stir together water, oil, vinegar, and vanilla extract. Add wet ingredients to the dry ingredients and stir until completely combined.

Pour batter into greased pan or baking dish. Bake at 350 degrees F for 30 minutes or until toothpick inserted in the center comes out clean. Remove from oven to a wire rack to cool completely.

While cake is cooling, make frosting by combining sugar, cocoa, milk, and butter in a medium saucepan. Bring to a rolling boil over medium heat.

Boil for 5 minutes, stirring constantly to prevent scorching.

Remove saucepan from heat. Add vanilla and beat with a sturdy spoon until frosting is glossy and starts to thicken. This will take a few minutes.

Pour frosting over the top of cooled cake and smooth across the top of the cake with the back of a spoon or spatula. Frosting will harden as it cools, so work quickly.

Let frosting set up. Cut and serve.
