Wacky Cake aka Hurry Up Cake or Crazy Cake

Why I Love This Recipe
Kid love this recipe too! This cake is super simple and easy to make and you always have the ingredients in your cupboards. Wacky Cake may have got its name from the way that it can be mixed right in the pan or because it rises even though it doesn't contain eggs, but rather uses ingredients like baking soda and vinegar for the leavening. Either that, and/or, Wacky Cake originated from the Depression era because of rationing when ingredients like milk, butter and eggs were scarce.
Ingredients You'll Need
1 1/2 cups all purpose flour (or 1 3/4 cups cake flour)
1 cup sugar
3 tablespoons baking cocoa
1 teaspoon baking soda
1/2 teaspoon salt
6 tablespoons vegetable oil (or substitute melted butter like I do)
1 tablespoon white vinegar
1 teaspoon vanilla extract
1 cup cold water
Confectioners' sugar for dusting over top of cake
In a large bowl, combine the flour, sugar, cocoa, baking soda and salt. Using a spoon, make three wells in the dry ingredients. Pour oil into one, vinegar into another and vanilla into the third. Slowly pour water over all. Beat on low speed until thoroughly combined (batter will be thin.)
*This cake can also be prepared right in the pan, follow directions above except grease the pan first.
Pour into a greased and floured 8-in. square baking dish. Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack.
Dust with confectioners' sugar or frost with icing of your choice.
For a 9" X 13" cake double recipe and use 9" X 13" pan and increase baking time to 35-40 minutes.
