"Raw Vegan Salad Energy"

Serves 2-4 | Prep Time 30 minutes | Cook Time none

Why I Love This Recipe

Fresh, crunchy, satisfying, quick and easy to prepare.

Holds up well in the fridge, so can be prepared the day before.

What more can you ask for from a salad.?

It took me 5 minutes to prepare using my handy dandy food chopper.


Ingredients You'll Need

1 cup celery
1 1/2 cup peppers, red, yellow
1/2 cup walnuts
1/4 cup onion
1/4 cup raisins
1 apple
1 cup grape tomatoes
or tomato cut up
1 avocado
1-2 Tbsp olive oil
1 Tbsp lemon juice
shakes of salt and cayenne pepper


Directions

Chop all the ingredients into bit size pieces.
Toss in a large bowl.
Add the lemon juice, olive oil, salt, pepper, stir and serve.
How easy is that ?


If you are not serving straight away - hold off on the avocado and cut tomato. Cut and fold them in gently just before serving.
