Warm Chicken and Cabbage Salad

Ingredients You'll Need

3 Chicken tenders
11/2 Tablespoons olive oil
1/2 Large onion, peeled and chopped
3 Large stalks celery, sliced
1/3 Cup cider vinegar
1/2 Large red cabbage, shredded
3 Tablespoons sugar
1/2 Teaspoon celery seed
Salt and pepper


Cut chicken into bite sized pieces and sauté over medium heat in a deep skillet until browned but not overdone about 10 minutes. Remove to absorbent paper and reserve. Heat oil in skillet over high heat, adding onion and celery and sauté briefly until onions are tender. Add vinegar, sugar, and celery seed. Heat until boiling; immediately add cabbage and chicken pieces, all at once. Stir and toss for about 1 minute, or until the cabbage is warm, not cooked. Season with salt and pepper and serve hot.
