Warm Coconut Oats

This recipe takes your ordinary oatmeal up a notch with thickening coconut milk and butter, plus hints of vanilla and cinnamon. A mindful, healthy way to start the day!!!

Ingredients You'll Need
1 cup steel-cut oats
1 can (13.5 ounces) full-fat
coconut milk
1/4 teaspoon vanilla bean
powder(or extract)
1/4 teaspoon pink Himalayan
salt
1/4 teaspoon ground cinnamon
1 tablespoon raw coconut
butter
1 tablespoon pure maple syrup
Directions
1. Drain and rinse oats
2. In a medium pot, bring the oats and coconut milk to a boil. Reduce the heat to low and simmer for 15 minutes, stirring occasionally.
3. Remove from the heat and stir in the vanilla, salt, cinnamon, coconut butter, and maple syrup until combined. Serve immediately as is or with whatever toppings you like: ground flaxseeds, more maple syrup, shredded coconut, milk, or fruit.
